Cream of "Something" Soup

I like to make casseroles.  I also like to make soup.  I like healthy things, but I tend to like really hearty, heavy meals, especially when it comes to soups and casseroles, and so does my man.  I was raised on that type of cooking, and my siblings and I have always been pretty healthy, even with all that heavy type of food.  So even though a part of me really wants to kind of jump on the bandwagon and try to eat light, super-healthy foods, I've decided that eating the way I was raised is perfectly healthy, as long as I keep active, especially since my metabolism is not quite the same as it used to be... ah, the joys of being a teenager and being able to eat ANYTHING and AS MUCH as I wanted, and still look like a bean pole.

It is also possible to do hearty and heavy in a healthy way, not that I'm an expert or anything, but I'm learning the ways as well as I can. Since I love those casseroles and soups, I was always in need of cream-of-whatever-soups, so naturally I just bought the canned stuff from the grocery store.  My mother-in-law is quite the health nut, partly because she needs to be and partly because she just loves it.  She is always talking about how terrible the chemicals are in most foods.

"They just aren't good for your body!"- said in my best Grandma Sue voice :)

So I decided to try to make and create as many things as I can on my own, so that I know what is in the food I make for my man and I to eat.  One of the coolest things I have found so far is a recipe for dry Cream of "Something" Soup, found here.  I had to buy some of the ingredients for it, but most of the ingredients are ones that most kitchens already have.  And let me just say, I think it is super delicious and flavorful compared to the store-bought canned stuff.  So, here's the recipe!

Cream of "Something" Soup
1 c. Non-fat dried milk
3/4 c. Cornstarch
1/4 c. Bouillon (any kind)
4 Tbsp. Freeze dried minced garlic
1 tsp. Dried basil
1 tsp. Dried thyme (I used parsley)
1 tsp. Pepper

1/3 c. dry mix + 1 1/4 c. water = one can of soup.
Cook until thick.


It is delicious and it has lasted me quite a while so far, and I still have all the ingredients to make more when I need it!  No more buying cream of whatever soup for me!  Just put a label on it with the recipe and store it.  Ta da!
